Copper River “Feast for a King” Wine Dinner As the largest run of Pacific King Salmon arrives, Chef Ty Schwenk and Sommelier Eric Cook have dug into the cellar to pull out the best pairings of red wines from Spain to Oregon to Burgundy and Piedmont to match preparations as diverse as Copper King Curry Ravioli and as pure as Salt & Pepper King Filet. This is a red wine lover’s dinner as well as salmon lover’s dream. This perennially popular dinner is in its 10th “run”; early reservations are encouraged to avoid disappointment.
