Fall Recipes from Beverly’s Chef – The Coeur d’Alene Resort

Our region is known for four distinct seasons, each with their own ‘best of list’ that we look forward to each year. But if we’re being honest, fall is my favorite. The crisp air, the sound of leaves dancing along the sidewalk, and the migration indoors where everyone seems to gravitate towards the kitchen … this is the magic of fall.
In the kitchen, over the best fall flavors people come together, share a meal, enjoy a conversation and stay connected. It’s a time of the year and traditions I eagerly await after a busy summer of go, go, go.
If you’re planning a fall get together with friends or family and wondering what to make, we have a treat for you! I asked Beverly’s Chef Jim Barrett for a few of his favorite fall recipes, and he created this special three-course menu just for us to share with you.
It’s a bit like having a taste of the delicious Resort cuisine in your own home. Your guests are going to be impressed!
Chef Barrett says, “Our North Idaho region provides an abundance of culinary treasures. When I have time off work, I will most likely be found hunting, fishing, and foraging for berries and mushrooms in the beautiful backcountry of North Idaho.” Not only are these recipes some of his favorite, many of these ingredients can be locally sourced or foraged here this time of year.

Flavors of Fall Dinner

First Course: Roasted Butternut Squash Soup with Maple Foam
Did You Know? Italian rice is the only kind of rice used to make risotto. Arborio, a large grain superfino rice, is the preferred choice because of its ability to absorb the liquid without overcooking.
Main Course: Braised Beef Short Ribs with Wild Mushroom Risotto

Dessert: Apple Crostata with Vanilla Bean Ice Cream & Whiskey Caramel Sauce
What is a Crostata? This charming, rustic dessert consists of a rolled out piece of dough piled up with fruit in the center. These are free-form, cooked on a flat sheet, and no two will look the same.
